Green Tea Tiramisu Cups (v)
These cups are a fusion of maple and coconut in ceremonial Green Tea to give a fun twist to traditional Tiramisu. Guaranteed to delight even the pickiest of eaters and biggest sweet tooth.

Ingredients:
1 cup full fat coconut milk
3 tablespoons of aquafaba
1 cup vegan mascarpone cheese (see recipe)
2 tablespoons of maple
1 teaspoon vanilla extract
1 cup brewed green ceremonial matcha tea, cooled
1 package ladyfinger cookies
1 smidge Matcha powder for dusting

6: 1 cup jars or cups
2: mixing bowls
Mixer or Whisk
Instructions:
In a mixing bowl, beat the coconut milk and aquafaba until stiff peaks form.
In a separate bowl, whisk together the vegan mascarpone cheese, maple, and vanilla extract until smooth.
Gently fold the whipped cream into the mascarpone mixture until well combined.
Dip each ladyfinger cookie into the brewed green tea quickly, making sure not to soak them too much.
Arrange a layer of dipped lady fingers at the bottom of each cup (I like to use 1 cup jars with lids for east storage).
two tablespoons of the vegan mascarpone mixture over the ladyfingers.
Repeat with another layer of dipped ladyfingers and the remaining vegan mascarpone mixture.
Pour a tablespoon of matcha tea on the top.
Cover and refrigerate the tiramisu for at least 4 hours or overnight to set.
Before serving, dust the top with matcha powder for a finishing touch.
