Ingredients:
Crust
Vegan Crust Recipe (A premade crust works great (rec: Wholly Wholesome))
Filling
2-6 tbsp vegetable broth (rec: 365 Whole Foods)
2 whole leeks sliced
2 whole shallots
1 tsp minced garlic, fresh or in water (rec: Kirkland Signature)
12 oz package of mushrooms of your choice
1 pinch sea salt fine (rec: Watkins)
1 tsp creole seasoning (rec:.Tony Chachere’s)
1/2 tsp turmeric (rec: Diaspora Co.)
1 tsp onion powder (rec: Watkins)
1 block (16 oz) extra firm tofu, diced (rec: House Foods)
1 tbsp Flour, Organic Unbleached (rec: Kirkland Signature)
1/4 tsp baking powder (rec: Trader Joe’s)
1 tbsp nutritional yeast (rec: Terrasoul Superfoods)

Instructions:
Preheat the oven to 375°F (190°C).
Fork crust and cook acording to instructions for 7 min.
In a saute pan, heat 2 tbsp vegetable broth over medium heat. Add leeks, and shallots, one minute later add garlic. Saute until softened. Remove from heat.
In a separate saute pan brown mushrooms with 2 tbsp vegetable broth to keep from sticking.
Add salt, creole seasoning, turmeric, and onion powder. Remove from heat.
Add spinach and leek mixture to the mushroom saute pan and set aside.
In a blender or food processor, combine tofu, flower, baking powder and nutritional yeast, until smooth.
Transfer the tofu mixture to a large bowl and stir in the cooked ingredients.
Pour the mixture into the pie crust and spread evenly.
Bake for 30-45 minutes or until the quiche is set and lightly golden on top.
Remove from the oven and let it cool for a few minutes before slicing and serving.
Enjoy your delicious vegan quiche! This quiche is as good as leftovers as it is fresh from the oven.
