Ingredients:
1/2 cup (150 grams) active sourdough starter (click for recipe). Add more or less starter depending on how sour you want your bread.
1 1/4 cups lukewarm water
3 1/2 cups all purpose flour (rec: Kirkland Signature)
1 1/2 tsp (6 grams) salt (rec: Watkins)

Instructions:
In a large mixing bowl, combine the sourdough starter, lukewarm water, and salt making sure lumps are broken and well blended.
Gradually add the bread flour mixing with a large wood spoon until a loose lumpy dough forms.
Knead the dough using stretch and pull method in the mixing bowl for about 5 minutes until elastic slightly lumpy.
While dough is still in the the bowl with smooth side up, cover with a shower cap, and let it rise at room temperature for 2 - 3 hours.
After the first rise, knead again with stretch and fold method for about 3 minutes.
Cover the dough again and let sit for another 1 hour.
Knead one last time with stretch and fold method for about 1 minute.
Preheat the oven to 450°F (230°C) with a dutch oven inside.
Score the top of the loaf (I like to make a large “X” on top), place it in the preheated oven, turning down to 375°F (190°C) and bake for 30 minutes.
Check your bread and make sure the top is still light in color (if not adjust the temperature down bake for an additional 20-25 minutes until the crust is golden brown.
Let the bread cool before slicing, it will be hot.
