Ingredients:
1 cup dried brown lentils (rec: Yupic)
2 cups arugula, coarsely chopped (your favorite lettuce will work)
1 med red onion, finely chopped
1 med cucumber, finely chopped
1 pint (12 oz) cherry tomatoes, quartered (I like to get the multi colored ones)
1/2 cup sundried tomatoes chopped in small pieces (rec: Pure Anatolia)
1/8 cup fresh parsley, finely chopped
Simple Dressing:
1 large lemon
1 tbsp of red wine vinegar (rec: Liokareas)
1 clove garlic, minced (rec: Member’s Mark)
1/2 tsp dried oregano (rec: Watkins)
1/4 tsp creole seasoning (rec:.Tony Chachere’s)
Measuring Spoons and Cups (rec: Tiluck)
Mixing Bowls (rec: Luvan)
Wood Spoon, Large (rec: Renawe)
Saucepan (rec: Avacraft)
Instructions:
Rinse the lentils under cold water. Place them in a pot and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender but not mushy. Drain and let cool.
In a large bowl add arugula, red onion, cucumber, cherry tomatoes, sundried tomatoes, and parsley.
In a small bowl, whisk together the lemon, red wine vinegar, garlic, oregano, and creole seasoning to make the dressing.
Add cooked lentils to vegetable mixture.
Pour the dressing over the salad and toss with wooden spoon gently to combine.
Taste and adjust seasoning if needed.
Chill the salad in the refrigerator for at least 30 minutes before serving.
